Cashew Tamari Dressing

This is another one of my FAVORITE recipes! It is so delicious, creamy, and nutritious! Again, this is one of the things I fell in love with while working at Wheatsville Co-op here in Austin, Texas.
This recipe is also great because you can use it in SO MANY different ways: salad dressing, dip, sauce, etc. I find dipping veggies in it is amazing, but it also goes really well on a salad. You can even toss some rice noodles and veggies in it, and it makes a really filling meal.
It also happens to be SUPER EASY TO MAKE, and requires almost no hands on time at all.

Ingredients:
1/2 cup raw cashews, soaked overnight, and drained
1-3 cloves of garlic (your choice)
2 tbsp. + 1 tsp. tamari (which is just GF soy sauce)
2 tbsp. + tsp. Apple Cider Vinegar
3 tbsp. oil (I like to use grapeseed oil because its lower in fat, but any neutral oil will work)
1/4 cup water
1/2 tsp. ground pepper
Directions:
Place all ingredients into a high speed blender, except the oil.
Blend on medium speed until the cashews are well blended.
Turn blend on low, and slowly add oil until combined and creamy!
BAM! It is that EASY!.
