Tacos. Being a proud Texan, Tacos are KING (or QUEEN). Everywhere you look here in Austin, Texas, there is a taco stand/restaurant, etc. Everyone you meet claims they know the BEST place to get one (some are right and some are wrong, haha).
Taco Tuesday exists for a reason, and everyone should be able to partake in this wonderful day.
For me, I do my best to avoid overly processed foods whenever possible. You can buy frozen vegan "grounds" and make taco meat from that. But I decided to go a different route.
WALNUTS? Why, you ask?

Heart Healthy Fats (rich in Omega 3's and 6's)
Improve brain health
Reduce risk of heart disease
High in antioxidants
Lowers cholesterol
Protein source
Lots of vitamins and minerals (copper, manganese, folic acid, B6, E, and phosphorus
See what I mean?
Why raw? For some foods, like walnuts, they retain more of their nutrients when they are raw!
This is a super simple recipe, and can be made in a food processor, or just a plastic bag.
Ingredients:
2 cups raw walnuts
2 tsp. garlic powder
2 tsp. smoked paprika
2 tsp. chile powder
2 tsp. cumin
2 Tbsp. Tamari (just GF Soy sauce, or just Soy Sauce if you have that on hand)
Food processor/or plastic bag (and something you can smash the bag with)
Directions:
Place all ingredients into food processor/plastic bag.
Smash the heck out of it/processes it up it resembles a crumb texture.
BAM.
You can put this on salads, tacos, quesadillas, nachos, or just eat it plain! Whatever you taco meat heart desires.
