Superfood Granola


Not to be a negative nancy, but that granola you're buying at the grocery store is loaded with sugar, and really nothing of value for you nutritionally.


This is coming from someone who LOVES granola. It's crunchy, and delicious in yogurt or just milk (vegan of course, at least for me).


My mind works this way: I'll just make it myself.


So may I present to you a low sugar, nutrient dense, but still DELICIOUS granola that you can make right in your own kitchen.


Bonus: everyone will be knocking at your door wondering what that wonderful smell is!


Ingredients:

  • 3 cups Bob’s Red Mill GF Rolled oats

  • ½ cup almond meal (or any kind of nut meal. You can make your own by grinding up nuts into a fine crumble)

  • ½ cup pumpkin seeds

  • ½ cup chopped pecans

  • ½ cup shredded coconut

  • 3 tbsp. Flax seeds

  • 3 tbsp. Chia seeds

  • 1 tbsp. Vanilla extract

  • 1 tsp. Ground cinnamon

  • ½ tsp. Ground cardamom

  • 1.5 cups dates, soaked in water, ¼ cup soaking liquid reserved for later use

  • ¾ cup dried fruit like blueberries, cherries, cranberries, or raisins

Directions:

  1. Preheat the oven to *350 and line a baking sheet with parchment paper.

  2. In a large bowl, combine oats, almond meal, pumpkin seeds, nuts, coconut, flax seeds, chia seeds, vanilla, cinnamon, and cardamon.

  3. In a blender, puree the soaked dates with the reserved ¼ cup of reserved liquid. Mix into the oat mixture to coat the oats thoroughly.

  4. Spread onto the baking sheet and bake for about 21-24 minutes until golden brown, stirring the mixture every 5 minutes or so to ensure even baking.

  5. Let cool completely, then mix in the dried fruit.


Storage Notes: Store in an airtight container at room temperature for 6-8 weeks.
